Fantastici dinner rolls americani, impariamo come farli
I dinner rolls sono deliziosi e soffici panini americani, indicati per un buffet si usano anche per gli hamburgher e si farciscono in mille modi diversi.
Ho fatto i panini dinner rolls seguendo alla lettera la ricetta di Fabrizio Ligis, senior cooker di Cookaround, sono venuti in quanto a morbiezza e volume ottimi, anche il sapore era buono, la consistenza buona. Di questi dinner rolls sono entusisita perche’ la prima volta che faccio panini e sono venuti morbidissimi. Li ho fatti piuttosto grandi.

Dinner rolls
400 gr di farina 00
7 gr di lievito secco
60 ml di acqua calda (non bollente)
240 ml di latte
45 gr di burro
1 uovo
1 cucchiaio di zucchero
3 – 4 cucchiaini di sale
1 cucchiaio di miele
Cominciamo coll’attivazione del lievito secco: versarlo nell’acqua calda (circa 40°) cin 1 cucchiaino di zucchero e mescolarlo, attendere 10 minuti perchè si attivi.
Nel frattempo mettiamo il burro nel latte e sul fornello a calore basso facciamolo fondere.
Quando il lievito si è attivato , versiamo nella stessa sua ciotola l’uovo sbattuto, lo zucchero, il sale, il miele ed 1 tazza di farina.
Mescolando con la frusta aggiungiamo la miscela di latte e burro che non deve assere bollente altrimenti uccidiamo il lievito.
Quando tutti gli ingredienti sono ben amalgamati aggiungiamo la seconda tazza di farina. Amalgamiamo bene ed infine aggiungiamo la terza tazza di farina. Deve risultare una pasta appiccicosa ma che si può rimuovere dal recipiente.
Togliamo la pasta dal recipiente e continuiamo a lavorarla sulla spianatoia. Solo se l’impasto diventa troppo appiccicoso aggiungiamo pochissima farina, si aggiunge la farina solo se la pasta è appiccicosa e non si riesce a lavorare. Lavoriamo per 6-7 minuti.
Alla fine avremo ottenuto una pasta una palla bella liscia ed elastica al punto che ritorna su quando spingiamo sulla superficie con un dito.
Versiamo in una terrina mezzo cucchiaino di olio d’oliva, vi adagiamo la pasta e la ungiamo completamente di olio per non farla asciugare.
Copriamo con una pellicola per alimenti e lasciaciamo lievitare in luogo tiepido fino al raddoppio dell’impasto.
Quando l’impasto è lievitato lo stendiamo sulla spianatoia dandogli la forma di un lungo rettangolo e col coltello tagliamo tanti pezzi di circa 70 gr .l’uno, con le mani gli si dà forma di palline, le adagiamo in una teglia coperta di carta forno, poi le riponiamo in luogo tiepido per la seconda lievitazione.
Quando avranno raddoppiato il loro volume, le inforniamo a forno pre riscaldato a 180° per 20-25 minuti, lasciandoli comunque cuocere fino a doratura.

400 grams of flour 00
7 grams of dry yeast
60 ml of hot water (not boiling)
240 ml of milk
45 grams of butter
1 egg
1 tablespoon sugar
3-4 teaspoons of salt
1 tablespoon honey
Let’s start activatingf dry yeast,: pour it in hot water (about 40 °) add 1 teaspoon of sugar and mix, wait 10 minutes because it activates.
Meanwhile, put the butter in the milk on the stove over low heat and let melt.
When the yeast is activated, pour in the same bowl beaten egg, sugar, salt, honey and 1 cup flour.
Stirring with a whisk add the milk mixture and butter but should not be boiling otherwise kill the yeast.
When all the ingredients are well blended add the second cup of flour. Stir well and then add the third cup of flour. It must be a sticky paste but that can be removed from the container.
We remove the dough from the bowl and continue to knead. Only if the dough is too sticky add little flour, addi flour if the dough iwhen it’s sticky and you can not work. We work for 6-7 minutes.
At the end we get a dough ball smooth and elastic and the surface rise after you push with a finger.
Pour into a bowl half a teaspoon of olive oil, put in the dough and anoint with oil to keep it completely dry.
Cover with a plastic wrap and llet rise in warm place until doubled dough.
When the dough has risen Roll out the pastry and give it the shape of a long rectangle with a knife many pieces of about 70 g .each, give it the form of balls, them put them on a baking sheet covered with paper oven, then we put in a warm place for the second rising.
When they doubled their volume, bake in pre-heated oven at 180 degrees for 20-25 minutes, leaving, however, bake until golden brown.
