Le bombe fritte gigantesche alla crema proprio come quelle del bar, grandi, gonfie e morbide, farcite con crema pasticcera sono una vera bontà, seguite la ricetta e vedrete.

Non sto esagerando, finalmente ho trovato la ricetta ultima e definitiva per le bombe fritte. Sono venute dei bestioni giganteschi, e non la finivano più di lievitare! Uno spettacolo immergerle nell’olio e vederle gonfiarsi infinitamente. Inutile dire che sono con la riga bianca nel mezzo, quindi fatte come Dio comanda. Un’altra cosa sorprendente è quante ne sono venute: 21 con 1/2 chilo di farina. E poi non è vero che con i ritagli di pasta non si possono fare altre bombe. Io li ho reimpastati e ne ho fatte altre, poi ho di nuovo reimpastato i ritagli dei ritagli e di nuovo ne ho ricavato altre bombe e così via fino all’esaurimento della pasta. Le bombe ricavate dai ritagli sono perfette come quelle ricavate dalla sfoglia originale. Il trucco è fare un’impasto molto molto morbido, lavorabile con le mani senza che rimangano attaccati i pezzi alla spianatoia, ma del tutto appiccicoso alle mani. Quindi alle dosi che vi dò mettete acqua quanto basta a renderlo in questo modo.

Bombe fritte giganti

500 gr di farina manitoba
75 gr di margarina
75 gr di zucchero
20 gr di lievito di birra (5,6 gr se è quello secco)
2 uova
5 gr di sale
la scorza grattugiata di mezzo limone
acqua q.b.
Impastate tutto insieme, se avete la planetaria è meglio ed è più facile,
se il lievito è secco mettetelo prima ad attivarsi in un pò d’acqua.
Aggiungete il sale solo ad impasto ormai terminato.
Mettete a lievitare in una ciotola coperta di pellicola trasparente, in un luogo tiepido.

Dopo due ore circa l’impasto sarà triplicato o sennò aspettate ancora perchè lievita moltissimo.
A lievitazione compiuta infarinate la spianatoia e stendete col mattarello la pasta ad uno spessore di poco meno di 1 cm e con un coppapasta o bicchiere di circa 8 cm di diametro ritagliate i dischetti, sistemateli su un canovaccio pulito ed infarinato perché l’impasto è molto appiccicoso. I ritagli di pasta reimpastateli, ristendeteli col mattarello e ricavatene altri dischetti.
Poi coprite tutti i dischetti con la pellicola di plastica e fateli lievitare circa 1 ora.
Metteteli a friggere in olio a 170° di temperatura, non di più.
Per prendere i dischetti dal canovaccio sollevateli con una spatolina piatta e leggermente unta d’olio e fateli scivolare delicatamente nella friggitrice.

Involtolate subito le bombe nello zucchero per farlo ben aderire.
Se volete farcirle con crema fatelo subito da calde bucando la cima con una sac à poche ed iniettando la crema.

The bombs derived   from clippings are perfect as those obtained in the original sheet. The trick is to make a very very soft dough, workable with your hands without the pieces cling to the surface, but quite sticky hands. So at doses that will give you put water enough to make it that way.

500 grams of flour manitoba
75 g margarine
75 g sugar
20 g yeast (5.6 g if it is dry)
2 eggs
5 grams of salt
grated rind of half a lemon
water
Mix everything together, if you have robot this  is better and it is easier,
if the yeast is dried do activation putting it into a glass of water and a tsp of sugar.
Add salt to the dough just when it’s  finished.
Put it to rise in a bowl covered with plastic wrap in a warm place.
After two hours the dough will be tripled or else wait any longer because it rises a lot.
When dough is rised , level it with a rolling pin and roll out the dough to a thickness of less than 1 cm and with a pastry cutter or glass about 8 cm in diameter cut out the disks, arrange them on a clean and floured cloth because the dough is very sticky. The scraps of dough you can repulpe  with a rolling pin and cut out remaining disks.
Then cover all the disks with plastic wrap and let them rise about 1 hour.
Put them to fry in oil at 170 degrees temperature, not more.
To get discs lift them from the canvas with a flat spatula and lightly greased with oil and cook gently slip into the fryer.
Immediately bombs in sugar to make it adhere well.
If you want to fill with hot cream do it now by puncturing the top with a pastry bag and injecting the cream.
