INGREDIENTI:
- 200 gr di ravioli con carne di cavallo Pasta Morena
- 150 ml di passata di pomodoro
- 80 ml di polpa di pomodoro
- 80 gr di carne macinata di bovino
- 1 carota
- 1 gambo di sedano
- 1/4 di 1 cipolla
- mezzo bicchiere di vino rosso
- sale qb
- parmigiano grattugiato
PREPARAZIONE:
Tritate finemente il gambo di sedano, la carota e la cipolla e mettetele assieme alla carne macinata in una padella antiaderente con un filo d’olio extravergine d’oliva e fate rosolare qualche minuto (la verdura deve essere dorata ma non bruciata). Versate il vino rosso e lasciate sfumare (deve evaporare l’alcool e rimarrà il sughetto). Una volta che il vino sarà sfumato agiungete la polpa di pomodoro e la passata, salate e lasciate cuocere a fiamma lenta per 10/15 minuti mescolando di tanto in tanto.
Mettete a bollire abbondante acqua salata in una pentola antiaderente e, quando l’acqua inizierà a bollire versateci i ravioli lasciandoli cuocere per 4 minuti. Prima di scolarli assaggiatene uno per verificare la cottura.
Scolate i ravioli e aggiungeteli alla padella con il ragù, fate mantecare qualche minuto e servite caldo con una bella spolverata di parmigiano grattugiato.
Questo piatto si accompagna bene con un Nero d’Avola o un Cannonau.

PREPARATION:

Drain the ravioli and add them to the pan with the sauce, thicken a few minutes and serve warm with a good sprinkling of grated Parmesan cheese.
