INGREDIENTI: (dose per 4 persone)
- 400 gr di pancine di pollo
- 400 gr di fegatini di pollo
- 500 gr di olive verdi sarde
- 1 carota
- 1 gambo di sedano
- 1 cipolla rossa piccola
- 1 bicchiere di vino rosso (meglio se Cannonau)
- sale qb
- acqua qb
- olio extravergine d’oliva
PREPARAZIONE:
- lavate, sbucciate e tritate finemente le verdure.
- In una padella antiaderente abbastanza capiente aggiungete un filo d’olio d’oliva, le verdure tritate e fate soffriggere sino a che la cipolla sarà dorata.
- Aggiungere le olive ben sgocciolate, le pancine e i fegatini, fate cuocere a fiamma media per 2 minuti e poi aggiungete il vino rosso.
- Quando il vino rosso sarà sfumato aggiungete acqua sino a coprire per metà la carne e, mescolando di tanto in tanto, salate a piacimento
- Se notate che la carne non è ancora cotta e l’acqua si è ristretta troppo, aggiungetene ancora.
- Al termine della cottura (un 30 minuti circa) dovrà restare una quantità minima di sughetto, i fegatini dovranno essere morbidi e le pancine (o durelli) dovranno perdere il loro classico color carne.

INGREDIENTS: (for 4 people dosage)
400 grams of chicken pancine
400 grams of chicken livers
500 grams of Sardinian green olives
1 carrot
1 stalk celery
1 small red onion
1 glass of red wine (preferably Cannonau)
Salt to taste
water as needed
extra virgin olive oil
PREPARATION:
washed, peeled and finely chopped vegetables.
In a fairly large pan, add a little olive oil, chopped vegetables and saute until the onion is golden.
Add the well-drained olives, pancine and the livers, cook over medium heat for 2 minutes and then add the red wine.
When the red wine will be nuanced add water to cover half the meat and, stirring occasionally, salted to taste
If you notice that the meat is not cooked and the water is too narrow, aggiungetene yet.
After cooking (a 30 minutes) will remain a small amount of sauce, chicken livers must be soft and pancine (or gizzards) will lose their classic flesh-colored.
