Oggi vi presento la ciambella rustica.La ricetta di oggi nasce da un bel gioco organizzato dalle blogger di Cookaround: COOKING CHALLENGE 2016.La ciambella rustica è simile al Tortano Campano ma in questo caso è una ciambella rustica da Cosenza a Salerno perche’ è una collaborazione a quattro mani tra me che sono di Salerno e della mia amica Carmen che e’ Calabrese .Abbiamo unito le nostre due citta’ ,usando il mio impasto che uso per il tortano e ingredienti tipici Calabresi .Cucinare Semplicemente e GustosissimoByCarmen si sono incontrate per dar vita ad una bonta’, creando questo splendido lievitato, semplice da preparare e mettendo un po’ dell’una che dell’altra…. un’esperienza divertente che ci ha dato modo di conoscerci e creare insieme.

Io ho preferito fare la lunga lievitazione per preparare questa iambella rustica , ho usato poco lievito ed ho allungato la lievitazione mettendo la ciambella in frigo.Ho impastato la sera per infornarla il mattino seguente e gustarla a pranzo
Ciambella rustica da Cosenza a Salerno
Ingredienti
250 gr. di farina 00
250 gr di farina manitoba
200 gr di acqua tiepida
100 gr di latte
3 gr di lievito secco
pepe q.b.
50 gr di strutto o burro
1 cucchiaino di sale
50 gr di pecorino
1 cucchiaino di zucchero
150 gr di provolone piccante
150 gr di spianata calabrese
Preparare la ciambella rustica
Setacciate in una ciotola la farina e aggiungete il lievito di birra , il pepe e lo strutto . Sciogliete il sale nell’acqua tiepida piu’ il latte e aggiungetelo nella ciotola, impastando il tutto fino ad amalgamare gli ingredienti. Trasferite il tutto su di un piano di lavoro e impastate sino ad ottenere un composto liscio ed omogeneo che metterete in una ciotola unta di strutto.Coprirete con la pellicola e lasciate lievitare a circa per 2 ore e mezza, o fino al raddoppio.
Trascorso il tempo indicato, spolverizzate di farina il piano di lavoro, prendete l’impasto, lavoratelo e poi stendetelo in un rettangolo piuttosto lungo;spalmare di burro e cospargere con il trito di spianata calabrese,formaggio piccante e pecorino.Arrotoloare la pasta dal lato piu’ lungo e formare la ciambella.Ungete uno stampo a ciambella con lo strutto e metteteci dentro il rotolo; sovrapponete le due estremita della ciambella e fate riposare per 30 min coperta con la pellicola.Dopo tale riposo sistemare lo stampo con la ciambella in frigo nella parte meno fredda fino al mattino seguente. Al mattino tirare fuori lo stampo dal frigo,fatelo acclimatare per 1 ora o piu,intanto la ciambella è bella e cresciuta.,accendere il forno ,portatelo alla temperatura di 180° e fatelo cuocere per 30 minuti .Sfornatelo e copritelo subito con uno strofinaccio,l’umidita’ lo rendera’ piu’ sofficeFatelo raffreddare del tutto e poi gustatevi la vostra ciambella rustica .

Procedimento
Mettere nel boccale l’acqua ,il latte lo zucchero e il lievito:1 min vel 3 37°.Unire la farina il pepe,il sale,lo strutto 40 sec.vel 6.mettete a lievitare in una ciotola coperta e al riparo da correnti ,va bene il forno preriscaldato a 50° spento e chiuso ,con lucina accesa
