I carciofi arrostiti sono una specialita’ che si prepara nel mio paese (Pagani in provincia di Salerno)In ogni casa non è domenica se non si fanno ,in special modo si fanno grigliate di carciofi a go-go quando sopraggiunge la festa del paese ,nella domenica successiva alla Santa Pasqua .In ogni via ,borgo e vicolo si vedono fornacelle/bbq a carbone piccole e grandi su cui si arrostiscono centinaia di carciofi da offrire ai visitatori di questa festa
Farli è semplice ,ci mettero’ piu’ a descrivervi il modo per prepararli e cuocerli che a farli ,nel mangiarli ci vuole un attimo ,ma ne vale la pena ,dovrete solo armarvi di pazienza e spazio aperto per cuocerli perchè faranno taaaaaaanto fumo !!!

I carciofi arrostiti
Carciofi tipo francesine ,di forma allungata e non tonda ,ma se trovate altri tipi andranno bene lo stesso ,l’importante è che non abbiamo la barba interna ,il che vuol dire che sono vecchi e duri
Prezzemolo abbondante
aglio almeno mezzo spicchio per ogni carciofo
sale fino
pepe o peperoncino
olio di semi e olio evo
fornacella o bbq
carboni
Importante i carciofi non vanno puliti dalle foglie esterne.
Come prima cosa battiamo sul tavolo i carciofi per farli aprire a fiore ,con il gambo nella mano battete piu’ volte il carciofo fino ad aprirlo bene .Tagliamo il gambo inferiore lasciandone circa 2 cm,dopo di che’ li mettiamo nella bacinela o lavabo tutti belli aperti e li laviamo .Immergiamo piu’ volte i carciofi nell’acqua fresca ,la cambiamo piu’ volte allargando sempre le foglie per far infiltrare l’acqua .Li passiamo anche sotto l’acqua corrente ,facendo infiltrare bene l’acqua nel carciofo e in tutte le foglie .Una volta fatta questa operazione li mettiamo a testa in giu’ in uno colapasta per far scolare tutta l’acqua
Nel frattempo prepariamo il prezzemolo lavato asciugato e tritato,tagliamo a piccoli pezzi anche l’aglio
Ci prepariamo a riempire i carciofi
All’interno del carciofo faremo cadere mezzo cucchiaino di sale fino ,poi una spolverata di pepe ,infine introduciamo l’aglio a pezzetti e il prezzemolo tritato,con il dito indice spingete in fondo la farcia del carciofo
Prepariamo la fornacella o bbq.
accendiamo bene i carboni ,lasciamoli consumare un po’ affinchè resti il fuoco vivace che emana calore
Appoggiamo i carboni sui carboni ardenti ,uno di fianco all’altro ,al centro di ognuno faremo cadere dell’olio di semi che servira’ per cuocerli internamente.cn la stagnola ,cosi’ facendo si creera’ del calore e i carciofi cuoceranno meglio .In alternativa della carta da pane bagnata e strizzata appoggiata sopra e una teglia per coprire il tutto
Chiudete la porticina sottostante alla fornacella in modo che i carboni non si consumano in fretta e lasciano cuocere i carciofi dolcemente
Lasciamo cuocere cosi’ i nostri carciofi ,ogni tanto li sposteremo e li gireremo ,perchè c’è sempre un lato che riceve piu’ fuoco e calore,cosi’ facendo cuoceranno uniformemente.Pressapoco ci metteranno 30/40 min o piu’ dipende sempre dalla grandezza del carciofo.Man mano che cuoceranno trasferite i vostri carciofi su di un piatto e una volta chei carciofi saranno tutti cotti passiamo alla pulizia
Prendiamo il carciofo da sopra e iniziamo a togliere con un coltello le foglie esterne bruciate ,poi passate al gambo che delicatamente pulirete togliendo la parte bruciata
Uno ad uno li sistemate in un piatto da portata e al loro interno lascerete cadere dell’olio extra vergine di oliva
L’olio scendera’ nel fondo e con esso si amalgameranno i sapori dell’interno stesso del carciofo rilasciando un sugo gustoso in cui e’ D’OBBLIGO la scarpetta. Per questo motivo i carciofi arrostiti vanno preparati qualche ore prima
E’ stato lungo da leggere lo so, ma vi assicuro che una volta provati cosi’ non li alscerete piu’
