I calzoni fritti ,altro non sono che l’impasto della pizza lievitata e fritta .Chiusa e farcita nei modi piu’ svariati dalla mozzarella e affettao alle verdure ,con la ricotta e provola con tanto pepe o co pomodoro e mozzarella .In qualunque modo li facciate sara’ una gioia portarli in tavola
Per fare i calzoni fritti io uso la pasta per la pizza ,voi usate pure la vostra ,oppure se volete provateli con la mia
Ricetta
500 gr di farina 00
10 gr di sale
250 gr di acqua
1/2 cubetto di lievito di birra fresco
Per il ripieno
ricotta
provola fresca e scolata
pomodoro
scarola ripassata in padella
In una capiente ciotola oppure preferite impastare con una planetaria mettete la farina e l’acqua tiepida in cui avete sciolto il lievito e ci aggiungete un pizzico di zucchero che aiuta la lievitazione

Impastate il tutto fino ad ottenere un impasto bello ed omogeneo compatto ma morbido che metterete a riposare coperto fino al raddoppio
Dopo il tempo di riposo staccate dallo stesso pezzi di circa 60-70 grammi…fate una pallina che metterete a riposare .Quando le avrete fatte tutte stendetele con il matterello ,farcitele, piegatele e con una forchetta incidete bene tutto il calzone cosi’ non si aprira’ in cottura Friggerli 2 per volta perche’ si gonfieranno molto durante la cottura ,un po’ di sale e buon appetito
