Inspired , today I tried this recipe. It is not difficult if not on the scale of salt; you must be careful because the clams with their cooking water can create a dish too salty. As for the pasta I’ve pulled it by hand , but however, any kind is ok.
And now … LIGHT THE FIRES !
INGREDIENTS:
- Fettuccine ( for the dough follow the instructions here )
- A can of chickpeas or 100g of dried chickpeas
- 800g of clams
-20g of chopped parsley
- Oil to taste
- salt … be careful !
- A clove of garlic
chili-pepper at your taste
WEAR THE APRON , WASH YOUR HANDS… LET’ GET STARTED!
- After preparing the dough for the fettuccine let it rest for about 10 minutes and then cut.
- Meanwhile, after you have done to purge the clams for a couple of hours in water and salt , proceed to rinse them , put them in a pan with a little water to get them to open … when they will open put aside their cooking water.
- In another pan put a little olive oil, a clove of garlic and a sprig of rosemary; when the pan is heated you can flavor the chickpeas for a few minutes.
- At this point whip them with a little of the cooking water from the clams until you have a smooth puree
- Cook the fettuccine in salted water , drain and mix them into the pan with the clams that you have properly shucked , add the chickpeas and a little drop of water from the pasta if you need to make it softer.

Ciao
