Parmesan artichokes

SONY DSCWe know that the artichoke is a food rich in minerals,
great to cook in a thousand ways, but before I leave the recipe, let me share with you
the story of its origins in Greek mythology.
It is said that it was precisely the embodiment of Cynara, a beautiful nymph of whom Zeus fell in love.
But in addition to being beautiful, the nymph was very moody and temperamental so that god, out of jealousy,
turned it into a green  thorny vegetable.
It seems that the green was derived from the color of Cynara’s eyes,
thorns were the many pains that Zeus suffered because of her.
This vegetable has a sweet heart, however, like the girl’s heart
which initially charmed Zeus.
The recipe is very simple… it is a timbale of
fried artichokes, served with a simple sauce made with tomatoes and basil,
enriched with the sweet taste and aroma of smoked cheese from Abruzzo.

Recommended wine:
Barbera di Monferrato,
Piedmontese wine, robust and full of personality.

And now … LIGHT THE FIRES!

INGREDIENTS:

- 4 artichokes

- Flour 00

-2 eggs

-Passata Tomato

-Oil Evo qb

-Oil Peanut for frying

-1 Clove garlic

-3 Basil leaves

-2 Scamorzine Abruzzo

-salt to taste

WEAR THE APRON, WASH YOUR HANDS, BEGIN!

Clean the artichokes, cut into slices and place in a bowl with water and lemon juice for about 15 minutes.
in a pan, put oil a clove of garlic,
soon will be lightly browned, remove and add the tomato puree,
salt and flavored with fresh basil.
Dried artichokes, pass them in flour, then in egg,
fry in peanut oil,
put them on a paper towel and proceed to the preparation of the pan.
Put on the bottom a bit of tomato sauce, a layer of artichokes,
tomato and slices of smoked cheese, another layer of artichokes, tomato, smoked cheese, until all ingredients are used.
Bake at 180 ° for about 25 minutes.
