Provencal pan

Legend tells that God created the Provence
with all the good things that were left over from the creation of the world.
I had the pleasure of visiting this country in 1985,
but I’ve still perfectly clear in my eyes
the colorful landscape, the slow pace of life, the smells of spices,
fields of lavender and … tenderloin with green pepper
better than I’ve never eaten in my life and
this pan of vegetables , fragrant and
really yummy.

Recommended wine:
Antinori Tormaresca Torcicoda Salento
Primitivo IGT Magnum
a wine warm, rich and full-bodied.

And now …LIGHT THE FIRES!

INGREDIENTS:

-3 artichokes

-1 lemon

-2 potatoes

-3 Tablespoons of broth

-1/2 Cup dry white wine

-1 Red onion

- Parsley, chives, thyme, basil, mint

- 3 tablespoons extra virgin olive oil

-Salt to taste

WEAR THE APRON, WASH YOUR HANDS, BEGIN!

Clean and cut the artichokes into slices rather thin,
put them in a bowl with water and
lemon and leave to soak for about 10 minutes.
Now cut the potatoes and onion slices.
Line a baking sheet with parchment paper,
Put potatoes and artichokes together,
toss with oil and salt,
sprinkle with broth and wine,
Put all the chopped herbs,
cover with a sheet of aluminum foil
and bake at 180 ° for about 20 minutes.
remove the paper and  cook for another 10 minutes.

Et voila … the taste of Provence on the table!
