Today we’ll eat a typical Roman dish , the vignarola ,
is a collection of early spring greens , artichokes, lettuce, beans, peas ,
it can also be prepared vegetarian version …
I opted for the one with the sweet bacon or bacon according to your preferences ,
accompany it with a slice of toasted homemade bread … a simple dish but the flavor unmatched !
And now … LIGHT THE FIRES !
INGREDIENTS:
- A head of romaine lettuce
- 4 artichoke hearts ( always put them to soak for 10 minutes in water and lemon)
- 200g of peas
- 200g of beans
- A white onion
- 2 tablespoons extra virgin olive oil
- Vegetable broth to taste
- Salt and pepper to taste
- Homemade bread to taste
WEAR THE APRON , WASH YOUR HANDS, BEGIN !
- In a low saucepan , put the oil and the onion or thinly sliced or grated
I prefer the second option , let it go over very low heat with the bacon,
When it becomes brown , add the lettuce cut into strips and artichoke hearts , salt and pepper and cook over low heat ,
After about 10 minutes add the beans in progression and peas, and continue cooking , which depend on the freshness and tenderness of the vegetables.
Et voila … a simple dish but really good … remember to serve with toasted bread !
