I really love the Sicilian cuisine ,
the wonderful scents and products of this italian region brings me back to my vacation last summer in Taormina .
Today I tried to make this delicious pizza from Palermo inspired to a recipe found in a book of specialties and regional dishes,
I obviously revised it according my personal tastes ,
for example in this pizza you can choose or anchovies or sardines,
I have not madethem , but you always follow your personal taste and the recipes always satisfy your palate !
And now … LIGHT THE FIRES !
INGREDIENTS:
- 500g of flour manitoba
- 300ml of warm water
- 25g of yeast
- 3 red onions
- 5 fieltti anchovy
- 150g of cheese
Tuma – 100g (hard to find if you do not live in Sicily)
- 500g of peeled tomatoes
- 50g toasted breadcrumbs
- Sugar to taste
- Oregano to taste
-extra virgin olive oil to taste
- Salt and pepper
WEAR THE APRON , WASH YOUR HANDS , BEGIN !
- Mix the flour with the yeast dissolved in a little warm water and add less than a teaspoon of sugar,
knead the dough , adding the remaining water , salt and two tablespoons of olive oil ,
until you get a dough, place the covered dough rise in a warm place for about 2 hours.
In a saucepan , sauté the onions thin sliced or grated 3 tablespoons of olive oil and 1/ 2 cup of water ,
add the tomatoes and cook for about 20 minutes, add salt and pepper .
Picked up the dough , roll it out with your hands on a greased baking tray ,
sprinkle with chopped anchovies and let rise again for 30 minutes.
Cover the surface with cheese cut into cubes , pour the tomato sauce,
sprinkle with toasted bread crumbs previously in a pan with a little olive oil and a pinch of sugar,
if you like abundant oregano and pepper.
- Bake at 180 degrees for about 35-40 minutes.
Et voila … sfincione Palermo is ready : .. a delight from Sicily !
