Mini cheese pizzas for Easter

I attended a couse about finger food  the Easter menu so
Today I want to offer these mini pizzas with cheese,
they have a wonderful flavor and can be enjoyed either alone or with salami,
I used the plain Roman , but on Easter Sunday reef … a go go !

And now … LIGHT THE FIRES !

INGREDIENTS FOR ABOUT 10 MINI PIZZAS :

00 – 300g of flour

- 4 eggs

- 75g of grated Parmesan cheese

-75 G of grated pecorino cheese

-  half a bag of yeast

- 5g of salt

WEAR THE APRON , WASH YOUR HANDS , BEGIN !

- First, sift the flour with the baking powder ,
then mixed with the eggs for about 5 minutes or by hand or with the planetary
if you knead by hand you will see that the dough will be very sticky and elastic ,
Now add the cheese and salt and continue to knead for another 4 minutes,
form a ball and put it to rest on a floor covered for 10 minutes,
after this time , press with your hands on the ball and let it rest again.

Put in greased and floured molds balls of about 75g in weight,
brush with a mixture of egg yolk more milk will make them shiny ,
bake in a preheated oven at 150 degrees for about 25 minutes.
