This morning I woke up and since it was Saturday, the sun was out and i didn’t have to work I decidedto go to the market to browse among the stalls of fresh produce.
In this market there is a WONDERFUL fish counter. I love it mainly because they prepare and clean the fish for me and so half of the hard work is already done!
I therefore propose tonight’s dinner.
COLD BROWN RICE WITH SEAFOOD
This recipe is quite simple, fast, can be considered a main course, and light!
If you like instead of brown rice you can use your favorite type of rice.
And now…LIGHT THE FIRES!
INGREDIENTS FOR 6 PEOPLE:
- 500 g brown rice
- 500 g squid
- 6 prawns
- 500 g mussels
- 6 cherry tomatoes
- extra virgin olive oil
- chily pepper
- garlic
- parsley
WEAR THE APRON, WASH YOUR HANDS…LET’S GET STARTED
- In a pan heat the oil, a clove of garlic without the soul (trick that makes it more digestible), the cherry tomatoes cut into small pieces.
- In another pan put the mussels with a little water and as soon as they open. shell them and set them aside along with their cooking water, which you are going to strain through cheesecloth to remove impurities.
- Cut the squid into small pieces.
- As soon as the tomatoes begin to soften, add the squid, prawns without removing the shell and mussels.
- Cook over medium heat adding the cooking water of the mussels previously filtered. This way you don’t need to add salt because this water gives the salty flavor.
- The cooking time is relatively short; remove the pan from heat when the prawns have taken a vivid color (orange) and the sauce has reduced enough to suit your taste.
- Cook the rice, drain it and jump it in the pan with the sauce for a minute, remove everything from the fire and add a generous handful of chopped parsley.
