Here it is without any doubt … you’ll wonder why this recipe has all these qualities; it’s easy,besides being a tasty dish, it can be a whim, but also a main course or why not a second course: this dish looks colorful and shame that you can not smell it. Try it and enjoy this delicacy along with a good glass of red sangiovese.
And now…LIGHT THE FIRES!
INGREDIENTS FOR 4 PEOPLE:
- 250 g 00 flour
- 300 g boiled and mashed potatoes
- 350 g sausages
- 2 hard boiled eggs
- 1/2 red Tropea onion
- 1 pepperone
- 1 eggplant
- 2 zucchini
- 1/2 glass of dry white wine
- a handful of pitted black olives
- extra virgin olive oil
WEAR THE APRON, WASH THE DISHES…LET’S GET STARTED!
- First, boil the potatoes
- Mash the potatoes and mix them with flour until you will reach the right consistency (trick: the flour must be added a little at a time)
- Now form balls of medium size, neither large nor small
- Now cut the pepperone, zucchini and eggplant (tip: after having cut the eggplant into slices put them in cold water with a handful of coarse salt for about ten minutes; this will contribute not to let them turn black and lose the aftertaste bitter.
- Meanwhile, heat the oil in a frying pan with the onion (as always grated), making it simmer over low heat for about ten minutes, then raise the heat and add the crumbled sausage and pepperoni.
- When the pepperoni will start to be quite soft, you can add the zucchini and eggplant.
- Cook adding a handful of black olives and a boiled egg cut into small pieces.
- Now fry the balls prepared before in a tall container with plenty of olive oil. I prefer to fry with this oil, because I think it’s much more healthy.
Put them to drain on a sheet of paper and let them cool.
- It ‘s time to prepare our saucepans! With the index finger make a small pressure inside.
- Fill them now with the sausage and vegetables and sprinkle over with the other hard-boiled egg. With the remaining meat and vegetables form a bed on which you are going to lay our saucepans.
