Ossobuco veal

Do you like ossobuco?
A recipe to make them quickly with a pressure cooker or if you have not,
cooking will obviously not 25 minutes, but an hour and a half.
The dish is very tasty, the meat tender,
if you want you serve this meat in the cold months with grilled polenta.

And now … LIGHT THE FIRES!

INGREDIENTS FOR 4 PEOPLE:

- 4 ossobuco veal

- 100g of celery

- 100g of carrots

- 50g of onions

- 40g of dried porcini mushrooms

- Oil qs

- 1.5 dl.  beef broth

- 1dl of red wine

- Flour taste

- Salt and pepper

-1 Clove of garlic

WEAR THE APRON, WASH YOUR HANDS, BEGIN!

In the open pressure cooker, fry with oil the mirepoix of celery, carrots, onions and the garlic.
In a pan fry the ossobuco floured and add them into the pressure cooker,
add the wine, add the dried porcini mushrooms previously soaked in water and broth:add salt and pepper.
Close the pot and since the whistle lower the flame and cook for 25 minutes. Turn off the heat and let the steam.
With chef Richard Zanni have served them with mini pies cracked wheat flavored with saffron.
