Another first from the culinary school … I learned to make the bisque and the dish is wonderful !
And now … LIGHT THE FIRES !
INGREDIENTS:
- 320g of pasta
- 500g medium-sized prawns
- 250g zucchini
- 1 shallot
- Pepper ( to taste)
- Peppercorns
- Celery, carrot , onion
- Parsley to taste
- Salt and extra virgin olive oil to taste
WEAR THE APRON , WASH YOUR HANDS , BEGIN !
Clean the prawns by depriving them of the head and carapace , removing the wire, set aside.
In a pan, saute oil, celery , carrot , onion with the heads and shells ,
add peppercorns, a tablespoon of tomato paste, some of the stalks of parsley
cover with the right need of water, simmer 15 minutes, drain and keep the liquid .
After preparing the noodles as the tutorial ,
prepare the sauce , in a pan with the oil gently fry the shallots ,
add the courgettes , sear and deglaze with very little bisque ,
bring to the boil , then rest in the pan for shrimp
and add the tomato cut into fillets , after having cooked the pasta, drain and stir into the sauce , if necessary , add more bisque !
Et voila … an excellent pasta !
