Attracted by this name so full of charm ,
I wanted to try making this sorbet ? Trick ? Mousse ? …
Try it, it ‘s hard to explain the taste of a cake with a delicate hint of orange that suddenly explodes along with the candied peel which give the crunchiness really nice,
I made some small compositions with caramel.
The following recipe will tell you how to  make the candied orange peel in a quickly way.

And now … LIGHT THE  FIRES !

INGREDIENTS:

- 160g of sugar

- 200g ricotta

- 5 sheets of gelatin

- 30 g candied orange peel

- Juice of 2 oranges plus the other 2 oranges

WEAR THE APRON , WASH YOUR HANDS , BEGIN !

Cut the oranges in half horizontally and empty them , keeping intact the cups .
Sieve the pulp and collect the juice in a bowl.
Squeeze the two oranges and strain the liquid , add the sugar and chopped candied peel .
Put on the heat when the sugar has dissolved and the juice boil ,
remove from heat ,
