Risotto with smoked cheese and chocolate

Here for experimentation ,
not without some fear because the union seemed risky …
and instead apotheosis of flavors that intertwine perfectly and give life to a great dish …
my book on extreme combinations of chocolate once again hit the mark !

You have to try this risotto … it is “almost” an order … you’ll thank me !

And now …LIGHT THE FIRES !

INGREDIENTS:

- 400g of rice

- 1 lt . beef broth (I used a delicate broth made with chicken breast )

-1 / 2 grated onion

- 60g of butter

- 2 tablespoons extra virgin olive oil

- 50g grated Parmesan cheese

- 100g of smoked

50g of super dark chocolate

- Salt to taste

WEAR THE APRON , WASH YOUR HANDS, BEGIN !

- In a pan , melt 40g of butter,
extra virgin olive oil , onion, when it will become transparent add the rice

- Bake , adding broth a ladle at a time , stirring, bring to cooking

- Turn off the heat and stir in the remaining butter and parmesan cheese
let stand a few seconds
and add the finely chopped smoked cheese and the chopped chocolate too , mix well and serve

.. Et voila … a risotto that favorably impress your palate !
