Buns with cream

Who is Roman, like me, will agree that the buns and cream are
an institution for us … and here I am a child in via Leone IV,
hands to my dad, the sky of Rome
blue as ever and just as this city can give …
swallows games in the air that smells of spring,
and I very happy to hand to my dad that
accompanies me eating the best bun with cream of my life …
because I ate with him!
Try to redo them, I followed  Anna Moroni’s recipe and
I must say that the result is fantastic!

If you want
accompany them with a frothy cappuccino super.

And now … LIGHT THE FIRES!

INGREDIENTS:

300g of flour Manitoba

-250g Of flour 00

-20g Yeast

-100g Of milk

-100g Of eggs

-80g Water

-65g Sugar

-50g Butter

-8g Salt

-Bacca Vanilla

–Scorza Orange

-250ml Whipping cream

WEAR THE APRON, WASH YOUR HANDS, BEGIN!

Mix the flours, sugar,
crumble the yeast ,
mix with water and milk, add the eggs,
add the grated orange rind and vanilla seeds,
Finally, add the salt and the butter removed from
refrigerator and cut into pieces.
Put the dough to rise covered with foil for about 90 minutes.
Now formed the dough balls of about 70 / 80g weight,
place them on the plate lined with baking paper,
let rise for another hour.
Bake in preheated oven at 180 degrees for about 15 minutes.
As soon as they are cooked and still hot brush them with a syrup
prepared with 160g of sugar dissolved in 120g of water.
Now assembled the cream, cut the bun in the center
without going to the end and, using a pastry bag
fill them.
