These crepes has taught me my mother-in-law , her name was Magda , she was Magdi for us, … she was a strong and proud woman and I never expected a compliment from her in the early years of our knowledge , however one day, I was just married I prepared her crepes and I invited her to lunch … she ate , she looked at me and with a smile said to me, ” the student has surpassed the teacher !” … This recipe is for you … you left us but always remain in our hearts!
And now … LIGHT THE FIRES !
INGREDIENTS FOR 15 CREPES :
- 125g of flour
- 3 eggs
- A pinch of salt
- A glass of milk
- Butter to taste
- 2 scamorzine
WEAR THE APRON , WASH YOUR HANDS… BEGIN !
In a bowl, put the flour, the eggs , a pinch of salt , mix eggs and flour slowly dissolving them with cold milk, then pour the butter (about two tablespoons) that you will melted.
- Grease a frying pan with a little butter, when it is hot enough, pour a ladle pre prepared dough, making a thin omelette
- Prepare a bechamel sauce, grease a pirex with the butter and then put on each crepe a bit of béchamel and cheese finely cut, roll and put into the pan
- Once you have placed all the crepes, place still bechamel sauce and parmesan cheese
- Bake at 180 degrees for about 20 minutes, until it has formed a crust
