To give a character to the usual grilled vegetables,
I thought these rolls with a crispy light filling .
The result was: a light dish very appetizing.
I recommend a light white wine: Greek white in 2009.
And now … LIGHT THE FIRES!
INGREDIENTS:
-4 zucchini
-A head of radicchio
- 4 slices of sandwich bread
-Erbette Mixed (parsley, rosemary, basil, etc …)
- Oil qs
- Salt and pepper to taste
WEAR THE APRON, WASH YOUR HANDS, BEGIN!
Cut the zucchini into thin slices and place on grill.
Then grilled radicchio leaving it soft.
In a cutter chop the bread without frame, only two slices,
once chopped, pass it in a pan with a little olive oil and toast.
Now, still in the cutter chop the other two slices of bread always deprived of frame with the herbs.
Add this mixture to the toasted bread.
Then prepare roulade stuffed with bread and herbs, both with zucchini that with the radicchio.
Put a little oil in the frying pan and just let them burn.
Et voila … a side dish really light!
