Rolls of salmon in orange sauce stuffed with spinach

A light meal but high impact,
salmon goes very well with spinach
and the fresh note of orange with crunchy almonds,
makes this fish dish very special.

Recommended wine:
Soave Superiore DOCG 2011 Vineyard Runcata
Cellar from Cero, intense wine,
persistent and very structured, perfect with the salmon.

And now …LIGHT THE FIRES!

INGREDIENTS:

-4 Salmon fillets

300g of spinach

-2 Oranges untreated

-Oil taste

- Salt to taste

-Mandorle grated

WEAR THE APRON, WASH YOUR HANDS, BEGIN!

Heat a non-stick pan as soon as it is hot,
put a little oil and pour the spinach, salt and cook for 2 minutes,
cut them and put them on the slice of salmon
rolled and formed a roll.
In a pan put a little oil and cook fish rolls.
In a small saucepan, boil the orange juice, as soon as slightly
reduced, remove from heat and pour flush the oil emulsified.
Pour the juice over the rolls and cook for a minute.
Decorate with chopped almonds and orange zest.
