Here is the recipe for frappe or lies or rags or … the secret that I learned from my grandmother is to prepare a thin sheet , because the frappe should be crispy and very light , another little trick is to fry them in abundant and hot oil, five at a time in a small saucepan and you’ll see a spectacular results !
And now … LIGHT THE FIRE !
INGREDIENTS:
- 500g flour 00
- 30 g butter, melted
- 2 egg yolks plus one whole egg
- A spoonful of sugar
- Salt to taste
- White wine to taste
- Oil for frying ( I used the peanut )
- Icing Sugar
WEAR THE APRON , WASH YOUR HANDS … BEGIN !
- With the flour , sugar, a pinch of salt, eggs , butter , make a paste that will work until it becomes smooth, must have the same texture of homemade pasta .
- Let it sit for about ten minutes and then roll it out on floured surface and with the aid of the wheel formed of strips and cut diagonally , then you can leave it like that or give the shape of a ribbon
- Put a small saucepan on the stove top and tight with plenty of oil , once it is hot, friggetene few at a time
- As soon as they have taken on a nice golden color , put them to drain on a paper towel , after that ‘ sprinkle with powdered sugar
Et voila frappe , the gossip , the lies, the rags , the rosettes … they are called in different ways in Italy!
