INGREDIENTS:
For the sweet dough brisee
- 150g of flour
- 75g butter

- 100g of strawberries clean
- 75g of cream cheese
- 50ml. of whipped cream
- For the chocolate mousse :
- 150g of melted white chocolate in a double boiler
.50 Ml . of whipped cream
- 75g of cream cheese
WEAR THE APRON , WASH YOUR HANDS… BEGIN !
- Prepare the mousse with a certain advance ,
as they need to rest in the fridge for at least 6 hours, For the strawberry mousse , melt the chocolate in a bain marie
- Put in a bowl the melted white chocolate , strawberries,
cheese and cream and used the immersion blender
to obtain a smooth cream that you will put in the fridge for 6 hours, the same procedure for the white chocolate mousse .
- Prepare the brisee working the flour and softened butter , add sugar,
a pinch of salt and a tablespoon of cold water, knead ,
form a ball and place in the fridge to rest for about 30 minutes.
After this time, roll out the dough very thin ,
- Cut the disks that are going to put it gently into the molds …
(I found the pirottine of baking paper disposable … what a treat! )
Also the molds will have to go in the fridge for about an hour.
- Bake for about 20 minutes until golden brown , let cool wraps, not just cold ,
using a pastry bag and fill them with the mousse .
