Revisited catalan

News from the cooking school “Coquis” and chef Richard Zanni, a Catalan revisited, a real goodness!

And now … LIGHT THE FIRES!

INGREDIENTS:

A lobster-

- Two red onions

- A carrot

- Celery

- Stalks of parsley

- Berries of pepper

- Extra virgin olive oil to taste

-Mustard to taste

- Lemon juice

Two boiled potatoes

- Cherry tomatoes to taste

- Basil

- Parsley

WEAR THE APRON, WASH YOUR HANDS, BEGIN!

Put in a pot of water, carrot, celery, onion, stalks of parsley, pepper berries and making the lobster bake for12 minutes.
In a bowl with ice water  put the onion cut into slices
prepared an emulsion based on olive oil, mustard and lemon and proceed to prepare the dish:
prepared a bed of boiled potatoes, place the lobster,
celery, , onion rings, tomatoes, basil and parsley,
sprayed with the emulsion!
