Canestrini ricotta mousse fruity

I love ricotta to madness,
I love sweets,
then this combination has given rise to:
baskets with ricotta mousse fruity,
the fruit is pureed with the pear, you will create a pleasant and light cream.
Recommended wine:
a glass of Brachetto D’Aqui,  soft and delicate flavor.

And now …LIGHT THE  FIRES!

INGREDIENTS:

For the dough:

-250g Flour

-1 egg

-50g Butter

- salt

For the filling:

200g ricotta

-100g Mascarpone

-1 Large pear Abbot

-1 / 2 teaspoon of sugar

-Buccia Of half an orange untreated for garnish

WEAR THE APRON, WASH YOUR HANDS, BEGIN!

Pour the flour into a bowl, break the egg in the center and add the softened butter,
salt and half a cup of lukewarm water.
Manipulated by adding water if needed, until the dough is soft and smooth.
Roll out the dough pretty thin,
cut out the squares with whom you are going to line the pirottine, past the
baskets in the oven at 180 degrees for about 10 minutes, until the dough becomes stiff.
Aside from the mixer with whisk the ricotta, mascarpone, pear and half a teaspoon of sugar,
blend until you get a soft cream with which you are going to fill the baskets.
Garnish with orange peel.
