Ravioli ricotta e spinaci con sugo semplice pomodoro e basilico. Un piatto perfetto per ogni occasione, da gustare con la famiglia o gli amici.
I ravioli sono da sempre uno dei miei piatti preferiti, ho un bel ricordo legato sopratutto a questo tipo di ravioli che nella mia provincia vengono chiamati cruguxiones. Quando ero bambina erano il classico pasto della domenica oppure delle feste, quando ci riunivamo con la famiglia e mia nonna li preparava a mano insieme a noi nipotini. I suoi ripieni preferiti erano questo oppure quello più dolce con ricotta e zafferano.

Ingredienti

  • 500 gravioli ricotta e spinaci

Ingredienti per il sugo

  • 450 mlpassata di pomodoro
  • q.b.basilico fresco
  • 1 filoolio extravergine d’oliva
  • q.b.sale e pepe
  • 1/2cipolla piccola

Preparazione

  1. Pulite e tagliate finemente e tritate mezza cipolla di piccole dimensioni.

  2. Fate dorare la cipolla in un filo d’olio extravergine d’oliva fruttato intenso.

  3. Quando la cipolla sarà dorata (fate attenzione a non farla bruciare, tenete il fuoco sempre al minimo) aggiungere la passata di pomodoro, le foglie di basilico, salare e pepare.

  4. Fate cuocere il sugo per almeno 20 minuti a fiamma media con coperchio, ogni tanto mescolate.

  5. a 5 minuti dal termine cottura aggiungete un pochino di parmigiano reggiano grattugiato e fatelo sciogliere.

  6. Mettete una pentola con abbondante acqua con due prese di sale grosso (se avete le mani grandi utilizzate due cucchiai rasi di sale grosso) a bollire.

  7. Appena l’acqua raggiunge il bollore versate i ravioli ricotta e spinaci e fate cuocere per i minuti indicati sulla busta (intorno agli 8 minuti).

  8. Appena i ravioli ricotta e spinaci sono pronti scolateli, versateli sul sugo, fateli mantecare a fiamma molto bassa per 2 minuti mescolando e poi servite con uno spolvero di parmigiano grattugiato e qualche foglia di basilico fresco.

    1. I have acquired my writing method over the years, I have loved writing since elementary school and it is my thing, I am very creative and I put all my personality into what I write. I don’t even know how to advise you because (besides my diploma thesis) I’ve never had to write or present anything else.     1. Usually in the morning before starting work I do a 3-minute meditation, I focus on my breathing and empty my mind of all thoughts. This helps me because then afterwards I get an avalanche of ideas.
