Crispy sandwiches animalier

These sandwiches in addition to being very crispy outside and soft  inside,
are fun, because the icing putting on the surface,
when the bread swells,
crumbles and  takes a golden color
reminiscent of the animalier in fashion.
Serve these sandwiches with ham or creamy cheeses.

Recommended wine:
Librandi Ciro Rosato, a Calabrian wine,
that gives the palate a hint of Mediterranean herbs.

And now … LIGHT THE  FIRES!

INGREDIENTS:

-500g of strong white flour

-10g Salt

-10g Dry yeast

-300ml Water

-5 Teaspoons of extra virgin olive oil

180g rice flour

-60g Multi-purpose white flour

-10g Salt

-25g Brown sugar

-200ml Water

-15 G of dry yeast

WEAR THE APRON, WASH YOUR HANDS, BEGIN!

In a bowl put the flour and salt,
add the yeast and a teaspoon of sugar,
make a cavity in the center and add the oil and start adding water, stir,
transferred the dough out onto a work surface and begin to knead until

and cover with plastic wrap,
let stand in a warm place for at least 60-90 minutes.
While the bread rises prepare the frosting :
Mix flour, salt and sugar in a bowl,
add the water and yeast,
continue to stir until you get a sticky consistency.
After 90 minutes,

flatten it.
You can now divide the dough into small rolls or in 2  loaves  by about 400g.
Brush the surface generously with
icing made ​​with rice flour and let rise again for 40 minutes.
Preheat the oven to 230 °, reducing the temperature to 200 ° after the first 15 minutes.
Continue to cook for another 20 minutes until the frosting will not be a nice dark golden color.
