Salad of Belgian endive, pears in white sauce with almonds

Longing for something cool … a different salad …
the slightly bitter of Belgian endive
combines with the sweetness of the pears,
the character of the dish comes out suddenly
with the taste of the sauce made with cream, Parmesan cheese , philadelphia and almonds.

And now … LIGHT THE FIRES!

INGREDIENTS:

-2 Heads of Belgian endive

-2 Pears Abbot

-40g Of grated parmesan cheese

-2 Tablespoons of philadelphia

-80g Of fresh cream

-30g Blanched almonds

-Salt and white pepper to taste

WEAR THE APRON, WASH YOUR HANDS, BEGIN!

Chop the almonds into strips along the length
and toast them in a frying pan.
Whisk the cream with the grain, the philadelphia and a pinch of salt.
Clean the endive leaves and cut into julienne strips,
Wash and peel the pears and cut them into slices not too thin,
mix them gently
topped with the sauce of cream,  a sprinkling of pepper and toasted almonds.
