Una buona zuppa di verdure è il mio comfort food preferito!
Ingredienti per 6 persone
2 grosse patate
6 coste di bietola
6 foglie di cavolo nero
1 “cesto” di broccoli
1 grossa cipolla
2 coste di sedano con foglie
2 carote
1 rametto di prezzemolo
mezzo cavolo verza
sale
olio EVO
Procedimento
Sbucciate / mondate / lavate tutte le verdure e tagliatele grossolanamente ( le patate a cubotti, le carote a rondelle, la cipolla a fette e tutto il resto delle verdure a strisce e/o pezzetti ).
Versate nella pentola a pressione (io ho usato quella da 5 litri) 3 cucchiai di olio e mettete tutte le verdure (la pentola era colma…). Aggiungete 2 litri di acqua, il sale, chiudete il coperchio, la valvola e fate cuocere a fuoco vivace fin quando la pentola non “fischia”. A questo punto abbassate la fiamma e cuocete per altri 10 minuti.
La vostra zuppa è pronta per essere servita, aggiungendo un po’ d’olio a crudo e una generosa spolverata di parmigiano.
Per chi non usa la pentola a pressione, il procedimento è lo stesso, aumenterà solo il tempo di cottura.

A tasty vegetable soup is my favorite comfort food!
Ingredients for 6 people
2 large potatoes
6 Swiss chardleaves
6 kale leaves
1 head of broccoli
1 large onion
2 celery sticks
2 carrots
1 sprig parsley
half cabbage
salt
Extra-virgin olive oil
Proceedings
Peel / clean / wash all the vegetables and cut coarsely (potatoes into cubes, carrots into thin slices, onion into larger slices and the rest of the vegetables into strips and/or pieces).
Pour in a pressure cooker (I used the 5-liters one) 3 tablespoons olive oil and put all the vegetables (the pot was full …). Add 2 liters of water, salt, close the lid, the valve and cook over high heat until the pressure cooker “whistles”. At this point, lower the heat and cook for another 10 minutes.
Remember to let the steam escape before removing the lid.
Your soup is ready to be served, adding olive oil and a generous sprinkling of Parmesan.
