Cous-cous con carne – Cous-cous with meat

Il cous-cous è una piatto della tradizione magrebina, molto versatile in cucina, poiché può essere accompagnato a carne, pesce o verdure. La versione che vi presento oggi è con pollo in agrodolce, sapore che adoro!

Ingredienti per 4 persone

500 gr di petto di pollo
1/4 di un bicchiere di vino bianco (50 ml)
3 cucchiai di olio EVO
1 cipolla
2 carote
sale
pepe nero
salsa Worcester
sciroppo d’acero
300 gr di cous-cous

Procedimento

Tagliate a cubetti il petto di pollo, tritate la cipolla e le carote, prendete una padella e mettete a scaldare l’olio. Una volta caldo, aggiungetevi la cipolla e le carote. Fate soffriggere per un po’, dopodiché aggiungete il petto di pollo e mescolate, alzando la fiamma del fornello. Versate il vino e fate sfumare, sempre mescolando.
Aggiungete poi due cucchiai di salsa Worcester ed un cucchiaio di sciroppo d’acero. Aggiungete sale e pepe qb.
Mescolate, abbassate la fiamma e coprite con il coperchio.
Dopo circa 15 minuti il pollo sarà cotto, ed immerso in un sughetto creato anche dalla condensa del coperchio.
Spegnete il fornello e preparate il cous-cous secondo le indicazioni sulla scatola. Io ne ho trovato uno davvero ottimo, con le porzioni già divise in bustine da 100 gr da immergere in acqua calda. E’ facilissimo da preparare ed è davvero buono!
Raccogliete il sughetto della carne e mettetelo in una ciotolina (questa parte è solo per chi deciderà di servire il cous-cous a parte).
A questo punto potete impiattare come preferite. A me piace servirlo come da foto, ovvero la carne da una parte ed il cous-cous dall’altra, ma se preferite potete mescolare il tutto.
Chi ama il piccante può aggiungere, durante la cottura della carne, della paprika o del peperoncino.

English version

The couscous is a traditional  Maghreb course, very versatile for cooking, because it can be matched with meat, fish or vegetables. The version that I present today is chicken with sweet and sour flavor, that I love!

Ingredients for 4 people

500 grams of chicken breast
1/4 of a glass of white wine (50 ml)
3 tablespoons extra virgin olive oil
1 onion
2 carrots
salt
black pepper
Worcester sauce (2 tablespoons)
maple syrup (1 tablespoon)
300 grams couscous

Preparation

Cut the  chicken breast into cubes, chop onion and carrots, take a pan and heat up the oil. When hot, add the onion and carrots. Cook for a while, then add the chicken and raise up the heat, always stirring. Pour the wine and let it evaporate, stirring constantly.
Then add two tablespoons of Worcestershire sauce and a tablespoon of maple syrup. Add salt and pepper.
Stir, reduce heat and cover the pan with a lid.
After about 15 minutes the chicken will be ready and dipped in a sauce created also by the condensation caused by the lid.
Turn off the cooker and prepare the couscous according to directions on its package. I found one really good, with the portions already divided in bags by 100 grams to be immersed in hot water. It ‘easy to prepare and really tasty!
Put the sauce of the meat in a small bowl (this part is only for those who decide to serve the cous-cous separately).
At this point you can serve the course as you wish. I like to serve it as in the photo, the meat on one side and the couscous on the other, but if you prefer you can mix all together.
Those who love  spicy food  can add, during the cooking of the meat, paprika or chili.
